Israel Launches Its First Single Malt Whisky
Tel Aviv’s Milk and Honey (M&H) Distillery has released the country’s first single malt whisky. Brewed in a kibbutz workshop for the first time, this whiskey was fashioned by Tomer Goren and the late Dr. Jim Swan. On release in late June this year, a total of 391 bottles were available. M&H distillery’s experimental series of whiskey is set to be globally distributed in 2019.
Tomer Green, M&H’s head distiller, created this concoction before the distillery had been constructed. In consultation with Dr. Jim Swan, M&H’s ex-consultant and first master distiller, he developed whisky recipes through malt and yeast experimentation. The two would often distill small batches of their creation in 225-liter capacity American Oak Casks. After maturing it for two and a half years, the whisky was transferred into ex-Bourbon barrels for a further maturation period of a month.
Founded in 2012, the distillery’s first of this kind expression has been rightly titled “Israel’s First Single Malt Whisky.” Claims have been made that their brew matures two-and-a-half times quicker than Scotch whisky and is equivalent to a six-eight year old Scottish single malt whisky. Further plans have been made to test maturation of their whiskys in mountains, deserts, and the low-lying waters of the Dead Sea.
The first 100 bottles of Israel’s first single malt whiskey will be up for online auction on the Whisky Auctioneer. The auction began on 11th August and is scheduled to be on till the 21st of the Month. The “kosher” whiskey has traces of malted barley, lemon, marzipan, cinnamon, orange zest, and black pepper-induced spiciness. It has a long finish, with an ABV of 46%. The palate is chocolaty, with a hint of spice, and malt.
The packaging is impressionable. Every bottle is hand-numbered and wrapped in a box. A personal parchment scroll comes along with every bottle. Once the auction closes, the rest would be available across select Israeli stores. The single malt will be distributed in stores all over the country by Hacarem.
