      20 ounces lychee can

      ¼ sugar

      16 brandied cherries

      ½ cup fresh lime juice

      Ginger beer

      12 ounces dark rum




Boil ginger and lychee syrup and then let it cool at room temperature for about 30 minutes.

In the meantime, fill 16 lychees with brandied cherries. Place each lychee in an ice cube tray. Pour the lychee-ginger syrup over the lychees after you strain it. Refrigerate for at least 4 hours.

Meanwhile, in a pitcher, dissolve the sugar in the lime juice. Refrigerate for 1 hour or until the rum is chilled.

Remove the lychee ice cubes from the mold and place them in a small punch bowl. Pour in the lime-rum concoction. Stir in the ginger beer and serve in ice-filled glasses.
