Single malt whisky from the Hellyers Road distillery in Tasmania (which Mike wrote a blog post about a while ago). This is the Original "Roaring Forty" expression, named after the 40km/h winds which blow in the rain-clouds, making the production of this whisky possible. It's aged in American white oak barrels
Australian single malt here from Hellyers Road, bottled for La Maison du Whisky as part of their Cellar Books series. This is a "Slightly Peated" expression, matured for 12 years in 100 litre casks. Very, very cool indeed.
A 10 year old Tassie single malt, produced at the excellent Hellyers Road distillery. This expression spends a decade slumbering in American oak bourbon casks, developing oodles of yummy vanilla-y notes alongside touches of cooked fruit and soft baking spices.
The Pinot Noir finish of the Hellyers Road varieties is matured in American White Oak casks first (see Hellyers Road Original Whisky), then finished for six months in Pinot Noir French Oak casks from Tamar Ridge, Tasmania. A delightful blend of two of Tasmania's greatest talents, it is marvelous to wonder what we may see produced here in the future. Hellyers is available in many European countries in addition to Australia. This is not currently available in the US.

Seagram's 7 Dark Honey is a liqueur from Seagrams made from their 7 Crown whiskey and, as the name suggests, dosed with honey, as well as spices and other sekrit ingredients. It's bottled at a hefty, for a liqueur, 35.5% and is a subtly flavoured addition to the Seagram's range
For decades, Gibson’s whiskies have been distilled, aged, blended, and bottled at the Schenley distillery in Valleyfield, Québec. But late in 2008, most of the blending and bottling moved to the Hiram Walker distillery in Windsor, Ontario. Still, the Gibson’s reputation is such that distillery employees in Valleyfield talk proudly of their past association with Gibson’s and at least one of them quietly squirreled away a stash of Valleyfield bottles when it was announced that production was about to be moved to Windsor. Meanwhile, workers at the Hiram Walker distillery exhibit similar pride at the coup of having snagged the Gibson’s contract.
